The Beloved Buddha Bowl
Buddha Bowls-the name itself makes one feel at peace and content. And that's exactly what happens when this diverse and delectable item is on your menu! They are everywhere and different places call them different things. By my definition, they are a one bowl meal that is full of whole foods like veggies and protein.
The magic of these trending main dishes is their ability to meet any dietary needs and preferences as well as picky eaters in your home. Yes, I said it! In YOUR OWN HOME!
Here's how I let Trader Joe's make this a regular menu item for my family.
Note: I shop at Trader Joe's because I get mostly pre-cut items, but most stores these days have that as an option!
Shopping list:
This list represents the bowl I made below, but the options are endless
cauliflower
broccoli
sweet potatoes
brussel sprouts ; I like the shredded ones because they get crispy
kale/power greens
brown rice/quinoa
protein of choice
goat cheese
onions
squash
avocado
dressing: hummus/cashew dressing/green goddess dressing...
other options: falafel, walnuts/nuts, beans...you get the point
Prep:
Pre-heat oven to 400
2-3 cookie sheets lined with parchment or lightly sprayed
Curried Cauliflower
cut into small chunks
toss with olive oil in bowl
season with curry powder, garlic powder, turmeric, cumin, salt and pepper
toss
place on cookie sheet
Remaining vegetables, roast in oven like cauliflower
Cook:
While veggies are baking
bake sweet potato in the microwave
cook the grain of your choice
cook the protein of your choice-I prefer to cut up some chicken breasts into cubes and then saute them in olive oil, salt and pepper and garlic
